I'll just call this the first installment of Recipes I've Tried and Modified.

The recipe of choice is from the dynamic duo Matt & Megha, of Keto Connect.

I recently mentioned my (slight) obsession with homemade cauliflower pizza since trying the Trader Joe's version. After looking at video after video, I decided to follow Matt & Megha's recipe. Ever since then my Youtube feed has been inundated with low-carb recipes: low carb cookies, low carb brownies, low carb pancakes, low carb tortillas... as much as "low-carb" anything always sounded so unappetizing, I couldn't help but admit that ome of these recipes sounded kinda good. Most use almond flour or coconut flour as the base, making any carby recipe easily modified with one simple ingredient. So i bookmarked a few and kept scrolling to the videos I was actually interested in, until this Cheddar Biscuit recipe popped up.

Not even kidding, i'm pretty sure I went out and bought almond flour that same day. 

I mean look at that picture. Seriously, scroll back up and look at it! 

I don't like the flavor of coconut, so I tried to modify the recipe using almond flour. It was a fail. Once I used the rest of that almond flour in other recipes, I finally caved and bought coconut flour. To my surprise, it didn't smell nearly as strong as coconut oil, and when it's cooked, the flavor is pretty mild, especially when mixed with all the delicious ingredients of this recipe:
  • 1 tbsp Butter
  • 2 tbsp Coconut flour 
  • 1 large Egg
  • 1 tbsp Heavy Whipping Cream
  • 2 tbsp Water
  • 1/4 cup Cheddar Cheese
  • 1/8 tsp Garlic powder 
  • 1/8 tsp Onion powder 
  • 1/8 tsp Dried Parsley 
  • 1/8 tsp Salt
  • 1/8 tsp Black pepper
  • 1/4 tsp Baking powder
I followed the instructions exactly as outlined, and man oh man. These suckers are heavenly. The best part? They don't leave your tummy feeling heavy like the Red Lobster versions do.

I've been making them with dinner like every day but with Colby Jack cheese instead of cheddar since I prefer to work with what's already in my fridge. Yesterday we had some left over, so I improvised and made a little post-dinner snack. You know, for those times after dinner when you're still kinda hungry but you don't really want a whole 'nother second helping? 

I put the oven on broil, cut the pieces in half, and topped them with pizza sauce, mozzarella cheese and a couple pepperonis. Et voila!

The original biscuit recipe can be found here, and it only takes about 5 minutes to make in the microwave with a coffee mug. Add another 3-5 minutes, depending on your oven, if you're going the mini pizza route.

After all my cheesy & meaty cravings pass (#NotPregnant), I'll probably try a dairy/meat-free version of these.
