You know how some families have meatloaf night or pizza night? Or just one, go-to dish that gets made/eaten every week? For me and my house, that will likely be taco night. One day in the future, my kids will know that if it's Tuesday, then we're having tacos for dinner. 

The taco craving hit me hard this week. After trying some street tacos around the corner from our house ($.99/taco!), I kept going back then finally realized this is probably something I could whip up in my kitchen at home. So I went to my local Supermercado, bought two different salsa verdes that just said "salsa" on the container - no other description listed, but they're both good n' spicy, just like I like it - and chopped up my ingredients. The result was everything I hoped for, which is clearly why I'm writing a whole post in which I talk about tacos.

It's also worth mentioning that in the past week, I've made: 

1. Homemade carne asada tacos (pictured above)
2. Lemon garlic pork roast with baked beans and rosemary potatoes
3. Thai chili grilled chicken with brown rice and mixed veggies
4. Spaghetti
5. Vegan banana bread, from scratch, at 10pm thanks to a random craving

I get good use out of my kitchen, and I used to post recipes here, but I stopped for some reason. It's time to change that. 

I'm not sure you really need a "recipe" for street tacos, but I used the following:

  • 1/2 Sweet Vidalia Onion - chopped
  • 1/2 Bundle of cilanto - chopped
  • 1/2 lb of Flank Steak - seasoned, chopped, and grilled in the skillet
  • Small Corn Tortillas - lightly grilled in the same skillet, after the meat was fully cooked
  • Lime Juice
  • Classic Salsa Verde
  • Creamy Salsa Verde
